Ingredients
  

  • 1 cup medium grain corn meal or polenta
  • 4 cups broth or water
  • 3/4 tsp salt
  • 3/4 tsp garlic powder
  • 3/4 tsp dried herb blend of choice

Instructions
 

  • Add all ingredients to the Instant pot and stir well
  • Set to manual, high pressure, sealing of the valve. Set to 9 minutes
  • Carefully open vent or let pressure come down naturally. Stir and enjoy

An old favorite where you don't have to chop things!! Everyone likes this chili-like dish and the addition of hash browns really makes this a favorite comfort stew when you feel like... being LAZY. It's a dump & go kinda dish!!

Ingredients
  

  • 1 32 oz. bag frozen hash browns thawed or not
  • 1 cup frozen corn
  • 1 cup frozen chopped spinach
  • 1 14 oz. can black beans rinsed and drained
  • 1 14 oz. can red kidney beans
  • 1 14 oz. any other kind of beans optional
  • 2 14 oz. cans tomato sauce
  • 1 1/2 cans water
  • 3 Tbsp chili powder
  • 2 Tbsp cumin
  • 1 Tbsp garlic powder
  • 1 Tbsp apple cider vinegar, or any vinegar
  • 3 green onions optional

Instructions
 

  • Combine all ingredients in a large pot and heat until potatoes are tender and all flavors are blended

Ingredients
  

  • 1 can jackfruit, rinsed, drained and soaked in warm water for 30 minutes
  • 2/3 cup bbq sauce of choice try a not-so-sweet variety
  • 1 tsp smoked paprika
  • 1 tsp onion powder
  • 1 tsp chili powder
  • 2 buns or pretzel rolls

Instructions
 

  • Preheat oven to 400 degrees. Place the soaked & drained jackfruit in a medium size bowl and crush with your hands or use forks to separate a little *
  • Sprinkle on seasonings and 1/3 cup bbq sauce. Stir well and place on a parchment lined baking pan
  • Bake 20-25 minutes in the oven OR cook stovetop for up to 35 minutes adding bits of water if needed and stiring occassionally
  • Stir in remaining 1/3 cup bbq sauce and serve on buns with coleslaw optional

Notes

*When draining, really press as much water out of the Jackfruit as you can before adding to bowl. This will really help with the final desired texture.  You may press excess water out with your clean hands by picking up fistfuls and squeezing while still in the colander...it's will shred the Jackfruit at the same time.  Another option is to layout a clean, thin, lint-free towel, place drained Jackfruit in the center, gather up the sides of the towel, then squeeze the water out of the Jackfruit through the towel.

Although this recipe has a lot of ingredients, the hardest part is making sure you have them all on hand and then just taking the time to measure as well as getting over your potential "fear" of using agar as this isn't an ingredient my mom ever used. It's otherwise a pretty easy recipe with some nice variations you could get creative with, such as adding some vegan cream cheese with sliced olives for example as seen in the photo. Lower your expectations on the mouthfeel as there is no fat in this recipe... yet, it has a lot of flavor and you can feel good about snarfing it all up on rice cakes or crackers, etc.

Ingredients
  

  • 5 Tbsp agar-age flakes OR 1 1/2 Tbsp agar powder
  • 1/2 cup carrots, chopped
  • 1/2 cup cashews
  • 1/4 cup nooch aka. nutritional yeast
  • 3 Tbsp tahini
  • 3 Tbsp lemon juice
  • 1 Tbsp dijon mustard
  • 2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/2 tsp dry mustard
  • 1/4 tsp turmeric
  • 1/4 tsp paprika
  • 1/4 tsp cumin
  • 1/8 tsp liquid smoke
  • 1 3/4 cup water

Instructions
 

  • Lightly oil a 3 cup bowl or mold with a rounded bottom and set aside
  • Combine water & carrots in a saucepan & bring to a boil. Reduce heat, cover and cook until very tender @ 10-15 minutes
  • Remove lid and stir in agar flakes. Bring to boil again. Reduce heat and simmer, stirring often until agar is dissolved @ 5-10 more minutes
  • Move to a food processor or blender and add the remaining ingredients
  • Process a few minutes until completely smooth, scraping down sides as necessary
  • Pour into oiled bowl and smooth the top (or at this point add sliced olives, nuts, etc.
  • Cool, uncovered, in the refrigerator. After completely chilled, it will be ready to unmold and serve. Slice into wedges & enjoy. Freezes well

Ingredients
  

  • 1 head cauliflower, trimmed and chopped
  • 1 cup potato, peeled & chopped @ 1 large potato, any variety
  • 1/2 cup unsweetened plant milk of choice
  • 1/4 cup nooch aka. nutritional yeast
  • 2 cloves garlic, peeled and crushed open
  • 2 tsp white wine vinegar
  • 1 tsp miso paste
  • 1 tsp onion powder
  • 1/4 tsp tumeric

Instructions
 

  • In a large saucepan cover the cauliflower & potato with water. Cook until well done @ 25 minutes
  • Drain, but SAVE the cooking liquid
  • Blend the cooked veggies with the remaining ingredients adding small amounts of cooking liquid as needed to reach desired consistency
  • Add salt & pepper to taste. Sauce will thicken as it cools

  • 2 slices toast
  • 2 Tbsp nut butter of choice
  • 2 Tbsp pure maple syrup
  • 1 apple, shredded OR use strawberries

Instructions
 

  • Using the shredding blade of a food processor, add fruit of choice or shred or mince by hand
  • Spread nut butter on warm toast
  • Add fruit and syrup and eat immediately with a knife and fork

Notes

We usually used apples for this recipe but the options are endless. Strawberries were used in the photo above.

This is just a yummy combination of my favorite bread, potatoes and seasoned tofu. We have served this casserole at many of our weekend Retreats. I like to make my own breakfast sausage patties and freeze them. See my Chick-It & Breakfast Sausage recipes to use in this recipe if desired. Trader Joe's has a nice poultry seasoning as of this writing, but I LOVE my Chick-It recipe! Thanks to Delisa Renideo, (yestolifesolution.com) - I always have this recipe made up and on hand!

Ingredients
  

  • 6 slices rye or pumpernickel bread, cubed or torn up day old, or left open overnight preferred
  • 1 32 oz bag shredded potatoes or cubed potatoes thawed or frozen but broken up
  • 2 pkgs. silken tofu
  • 3 Tbsp Vegan Poultry seasoning Trader Joe's brand, etc. See my Chick It recipe
  • 4 Tbsp nooch aka. nutritional yeast
  • 1 1/2 Tbsp onion powder
  • 2 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp tumeric
  • 1 tsp parsley
  • 1 tsp salt
  • 1 box vegan sausages, thawed and crumbled If buying a 'raw' version like beyond sausage, cook first, then crumble or chop

Instructions
 

  • Set the oven to 350 and prepare a 9 x 13 baking pan (or use parchment)
  • Place bread cubes in bottom of baking pan
  • Blend the silken tofu with remaining seasonings and pour 1/2 the mixture on top
  • Layer the potatoes and crumbled sausage next, saving some sausage for the top
  • Add the remaining blended tofu, sausage and sprinkle with paprika
  • Cover and bake for 30 minutes, then uncover and bake an additional 20 minutes until potatoes are browned and tofu is set. Let rest 10 minutes before slicing

You may find that you need to add up to 1/4 cup water to the Tofu/seasoning mixture. Try adding just enough to get it all to blend well.

Ingredients
  

  • 2/3 cup garbanzo flour or chickpea flour
  • 1 cup cool water
  • 2 tsp nooch aka. nutritional yeast
  • 1/2 tsp baking powder
  • 1/2 tsp onion powder or minced dried onion flakes
  • 1/2 tsp salt
  • 1 handful chopped veggies such as broccoli slaw, diced
  • 2 Tbsp vegan cheesie sauce or cheese shreds of choice

Instructions
 

  • Set oven to 400 degrees. Grease 2 ramekins, a mini loaf pan or use muffin cups. I prefer to use parchment muffin cups with zero oil. Set aside
  • In a small bowl whisk together garbanzo flour, nooch, baking powder, onion powder and salt
  • Whisk in the cool water until well combined. Add chopped veggies & vegan sausage, etc. if using
  • Carefully scoop mixture into muffin cups or baking pan
  • Bake at 400 for 20 to 25 minutes, or until browned on top

Notes

These amaze me in that they go into the oven so liquid-y and yet come out dense, yet soft and so nicely flavored. A dollop of cheesie sauce and vegan sausage really elevates these to favorites of mine.

  • 4 cups rolled oats not steel cut or instant
  • 3/4 cup fruit juice orange, apple or pineapple
  • 3/4 cup pure maple syrup
  • 2 Tbsp vanilla
  • 4 dates, pits removed medjool are very sweet
  • 1/2 cup slivered almonds
  • 1/2 cup chopped walnuts
  • 1/2 cup dried cranberries or raisins

Instructions
 

  • Place oats in a large bowl
  • Blend fruit juice, maple syrup, vanilla and dates in a blender or food processor
  • Pour over oats, add nuts if using. Mix well
  • Spread mixture evenly on a large, prepared baking sheet
  • Bake at 250 degrees for 2 1/2 hours, stirring once or twice
  • Watch carefully as this mixture will turn a light brown color. Remove and cool completely
  • Add dried fruit and store in an airtight container for up to 2 weeks, or freeze
